My Caesar Salad Dressing

You’ll wonder why you even bothered with store bought dressing once you start making this at home. Nothing beats fresh ingredients and knowing exactly what you’re putting in your mouth – especially when it’s this darn good.

Yields: 16 oz / 1 pint

Time: 15 mins

Ingredients:

  • 1 egg yolk
  • 1 Tbsp capers (approx 30-40 capers)
  • 6 anchovies filets
  • 1 Tbsp garlic (approx 3 large garlic cloves)
  • 1-1/2 Tbsp Worcestershire sauce
  • 2 Tbsp lemon juice (approx 1/2 large lemon)
  • 1-1/2 Tbsp Dijon Mustard
  • 2-1/2 Tbsp red wine vinegar
  • 1/3 to 1/2 cup grated Parmesan cheese (more is okay)
  • 1 cup vegetable oil (3/4 cup vegetable oil & 1/4 cup olive oil is great to add flavour)
  • 1/4 tsp salt
  • 1/4 tsp pepper

Directions:

  1. Blend the top 9 ingredients together in a blender or food processor until well incorporated.
  2. Slowly add vegetable oil and olive oil in a steady stream to emulsify.
  3. Taste with salt & pepper.
  4. Fill clean jars and refrigerate for up to 7 days
